This healthy hedgehog slice recipe hits the spot when it comes to my naughty snack 😉
This recipe can be modified in many ways but adding nuts, seeds, different toppings or dried fruit pieces.
- 1 cup walnuts
- 1/2 cup dried dates soaked in hot water and drained
- 2 tbsp honey
- 2 tbsp cocoa
- 3 tbsp desiccated coconut
- 1 cup puffed rice
- 2 tbsp cocao powder
- 1 tblsp coconut oil
Soak dates in boiling water and drain.
In a mixer add walnuts, honey, cocao, dates and coconut. Blitz till pliable and still a little nutty. Stir through puffed rice.
Press into a prepared lined tin
Microwave coconut oil if hard and mix in cocao powder. Pour over mixture, moving about to cover. Sprinkle with extra coconut or nuts.
Place in fridge or freezer for approx 30 mins or until set.
Cut into pieces and serve.
