Cherry Ripe, slice of heaven


Hmm, a healthy snack that is going to to fulfill my chocolate and sweet tooth cravings? Look no further than this gorgeous cherry slice, filled with lots of healthy ingredients that won’t leave you feeling guilty πŸ˜€ No baking required!!


1 cup almond meal
1/4 cup whole almonds
1/3 cup cocao powder
2 tbsp organic maple syrup
3 tbsp melted coconut oil

1 1/4 cup cherries fresh or frozen (seeds removed)
2 cups desiccated coconut
10 medjool dates soaked
1/4 cup coconut cream (or just under depending on how soft you’d like the center)

block dark chocolate
1/4 cup melted coconut oil
1/4 cup cocao powder
2 tbsp maple syrup


Prepare a rectangle slice tin and line with baking paper

Place all ingredients into a mixer and blend until smooth. Pour into prepared tin and press down to form a base. Refrigerate for at least 30 mins.

Place all ingredients into a mixer and blend. Leaving a few roughly chopped pieces adds to the texture πŸ™‚ Pour filling over prepared chilled base and smooth out until even. Refrigerate for 30 minutes.

Break chocolate pieces into squares and melt over a double boiler or in microwave until silky. Pour over prepared filling and move chocolate sauce around until the slice is fully coated. Refrigerate until set.

Melt coconut oil and mix in cocao powder and maple syrup until smooth. Pour over prepared slice and move around until fully coated. Place in fridge till set.


Once the chocolate topping is set your slice is ready to serve. I suggest a serrated knife to calve through the hard chocolate so it doesn’t break into pieces, although this adds to the home made rustic look.
Store in an air tight container in the fridge if you haven’t gobbled them down πŸ˜€

Cherry – Vitamin C, copper, manganese, potassium, fiber, protein
Coconut – Manganese, iron, potassium, selenium, copper
Almond – Vitamin E, Vitamin B2, magnesium and manganese.
